My Two Favorite Raw Vegan Recipes - Walnut Pate and Red Dressing
On a raw vegan diet like most humans on other diets, the same foods are consumed regularly. For me on a raw vegan diet it is walnut pate and red dressing. I use the walnut pate as a substitute meat. In fact, even carnivores eat walnut pate in the absent of meat. I put it in my salads or top my zucchini noodles for a meatball experience. It it good to create patties or meatballs.
Walnut Pate
1 cup walnuts (soaked 20 minutes, drained)
1 tablespoon lime juice
1 teaspoon Garisar Extra Virgin Olive Oil
1 teaspoon Braggs Liquid Aminos (or a low sodium soy sauce)
1/4 teaspoon Frontier Co-op Organic Garlic Powder
dash of sea salt
1 tablespoon parlsey (or cilantro)
1 tablespoon onion
Pulse a few times and then process all in food processor for a minute. Mix well. Store in covered glass bowl for a week.

I top my salads with a dressing. There are soooo many raw vegan dressings to choose from but this raw vegan red dressing is my go to that I make in double quantities. Again, I use both in my salads and pasta.
Raw Vegan Red Dressing
1 tablespoon raw pumpkin seeds, ground
3 tablespoons lime juice
3 pitted medjool dates (soaked for 20 minutes to soften, drained)
1 tablespoon Braggs Liquid Aminos (or a low sodium soy sauce)
1 cup Bella Sun sundried tomatoes
1 cup cherry tomatoes
1 clove garlic
1 tablespoon hot sauce (or pinch of red pepper flakes)
Blend in high speed blender until mixed well. I use a Magic Blender for single batches, or my Cuisnart 8-cup Food Processor when i double the recipe.
Top your salads or noodles with olives, onion, red peppers a complete meal!
